I got this idea from a recipe in a magazine that used curry and mango chutney. Not having any mango chutney, I used some sweet mango/pineapple salsa. The raisins go nicely with a little bit of spice from the chili powder, and you can use any type of ground meat you prefer.
Duration. Prep time: ~10 min. Cook time: ~25 min. You are eating in 35 min.
Preheat the oven to 425 °F
Ingredients:
1 lbs. ground meat (in this case turkey)
1 ½ tsp. curry powder
1 tsp. chili powder
1 ½ tsp. salt
½ tsp cumin
½ tsp cinnamon
¼ cup raisins (golden preferred)
1/3 cup mango/pineapple salsa
2 tbps cilantro leaves
1/3 cup oats
Get a big bowl and put the meat and all other ingredients in. Mush it all together with your hands until it’s just about mixed.
Make ~12 meatballs slightly larger than a golf ball. Put them in a good non-stick metal baking tray with a lip.
Put them in the oven for 25 min.
Enjoy! These a great for dinner or breakfast along with your favorite side dish and are easy to take with you.
